You can use frozen veggies for this to mix it up and make prep even faster! Just microwave them in the mug for a minute first and drain off the excess water afterward. Chopped bell pepper and onions are great choices!
Ingredients
- ½ cup packed fresh spinach or greens (power greens anyone?)
- 1 egg
- ⅓ cup milk
- ⅓ cup shredded cheddar cheese (optional)
- 1 slice cooked bacon, chopped (optional)
- salt and pepper, to taste
Instructions
- Take fresh spinach, place it in mug with 2 tablespoons of water. Cover with a paper towel and microwave on high for one minute. Remove from microwave and drain the water and liquid from spinach thoroughly.
- Crack the egg into the mug with the veggies and add the milk, cheese, bacon (if using), and salt and pepper. Mix until thoroughly combined.
- Cover with a paper towel and microwave on high for 3 minutes, or until fully cooked.
WaaaaLaaaaaa!! Dash of hot sauce? GO for it! Please, just don’t ruin your eggs with ketchup. Seriously!
