Summer is a time for salads. A salad CAN be exciting. You just need fresh, quality produce and a lot more than just lettuce. This recipe utilizes sweet and tangy cherry tomatoes that have been marinated in oil and pesto to give the salad a pop of life. Plus, a great dressing. Feel free to add any of your favorite salad toppings.
Ingredients:
2 heads or 1 large package of butter lettuce (or your favorite salad blend)
1 Garlic Clove (diced)
1 tablespoons Basil Pesto (homemade or in a jar)
3 tablespoons Balsamic Vinegar
1/4 cup Olive Oil
1/2 cup Diced Red Onion
2 pints Fresh Organic Cherry Tomatoes
Instructions:
1. Halve the tomatoes and add them to a large zipper bag with the sliced red onion.
2. Add the olive oil, balsamic, pesto, diced garlic and sprinkle with salt and pepper.
3. Seal the bag, getting all the air out. Place into the fridge until ready for to serve (at least 30-minutes).
4. Place the lettuce in a large bowl and pour on the tomatoes. Toss and serve! (The dressing
from the tomatoes becomes the salad dressing.)
