1/4 teaspoons Dill (fresh)
1 cups Chicken Broth
2 teaspoons Olive Oil, Extra Virgin
1 serving (1) Garlic Clove
1 cups Diced Red Onion
1 cups Cauliflower – Fresh
1 cups Broccoli – Raw
1 cups Zucchini – Raw
1 cups Squash, Yellow
Steam the squash, zucchini, broccoli, and cauliflower. Set them aside.
In a frying pan, caramelize the onions and garlic.
in a blender, working in batches, puree some of the broth with the steamed vegetables, onions, garlic,
do this until all of the ingredients have been pureed.
pour mixture into a large soup pot.
Season to taste with salt and black pepper.
simmer until hot and enjoy.
