I love good healthy guacamole and I never get tired of my craving – but sometimes I need to add a little protein to my fat so I can round out the meal. (Yes, I can eat a meal of guacamole!)!! I often reach for Tuna in a pinch because It is virtually ready to go from the can. It has some great omegas and a great source of protein as well. Make sure you buy a good quality, organic, wild caught tuna to get the best available nutrients!
Wrap Ingredients
- 2 leaf Lettuce, Butterhead, Boston, Bibb, Raw
- 1/8 teaspoons Salt, Kosher
- 1 tablespoon Lime Juice
- 5 oz Albacore Tuna (Wild Planet)
Super Guacamole
- 2 tablespoons Chopped Cilantro
- 1/3 cups Carrots, Shredded (dole)
- 1/3 cups Cucumber – Raw
- 2 fruit Avocado, California, Raw
- 2 tablespoons Coconut Oil
- 1 tablespoon Lime Juice
- 1 serving (1) Garlic Clove
- 1/3 cups Diced Red Onion
- 2 Cups Kale
Instructions
- Massage Kale with a little bit of salt and coconut oil
- Finely chop or shred remaining vegetables, cilantro, and garlic.
- Scoop out the fruit of both avocados and mash into a medium bowl.
- Combine all ingredients and mix thoroughly
- Crack open a can of tuna, dump it in a medium-sized bowl, and gently break up the meat with a fork.
- Add guacamole, salt and pepper (optional) to the tuna in the bowl.
- Scoop 1/2 of the mixture in a butter lettuce leaf, wrap it up and chow down.
