Ingredients
- ½ head romaine lettuce, chopped
- ½ of a large tomato, diced
- ½ cucumber, diced
- 2 green onions, sliced
- ½ cup pitted kalamata olives, sliced
- ¼ cup crumbled low-fat feta cheese
- ¼ cup olive oil
- 2¼ tsp. red wine vinegar
- 2½ tsp. parmesan cheese, grated
- 1½ tsp. lemon juice
- 1½ tsp. garlic, finely diced or put through a press
- 1½ tsp. dried oregano
- ¼ tsp. dried basil
- ¼ tsp. salt, or more for taste
- ¼ tsp. pepper, or more for taste
Instructions
- Combine lettuce, tomato, cucumber, green onions and olives in a large bowl.
- In a mason jar, combine olive oil, vinegar, parmesan cheese, lemon juice, garlic, oregano, basil, salt and pepper. Place lid on jar and shake until combined.
- When ready to serve/eat salad, pour dressing over lettuce mixture and toss with feta cheese. Enjoy!
