Lamb burgers are my favorite. You can also easily adapt this recipe by making smaller lamb meatballs and have a great entree salad.
INGREDIENTS

- 1/3 cup chopped fresh mint (optional)
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 3 tablespoons olive oil, divided
- 1 1/3 pounds ground lamb
- 4 hamburger buns or small ciabatta rolls
- 1 1/2 cups baby spinach leaves
- 3 tbsp chopped cilantro
- 1 1/3 cups crumbled feta cheese
- red onion sliced thin
- 1 1/2 teaspoons balsamic vinegar
PREPARATION

- Mix mint, paprika, salt and 1/2 tablespoons oil in medium bowl; mix in lamb. For more tender burgers manipulate the lamb as little as possible to get the spices mixed in.
- Shape into four 3/4-inch-thick patties. Make a dent in the middle so it cooks evenly.
- Grill, pull them off the heat at 145 degrees. do not overcook them lamb dries up quickly.
- Toss spinach, feta, cilantro, onion, vinegar, and 1 and 1/2 tablespoons oil in bowl.
- Assemble and Smash together. Seriously. smash it, or your feta is going everywhere.
