Summer Burger Series: Lamb Burgers

Lamb burgers are my favorite. You can also easily adapt this recipe by making  smaller lamb meatballs and have a great entree salad.

INGREDIENTS

    • 1/3 cup chopped fresh mint (optional)
    • 2 teaspoons paprika
    • 1/2 teaspoon salt
    • 3 tablespoons olive oil, divided
    • 1 1/3 pounds ground lamb
    • 4 hamburger buns or small ciabatta rolls
    • 1 1/2 cups baby spinach leaves
    • 3 tbsp chopped cilantro
    • 1 1/3 cups crumbled feta cheese
    • red onion sliced thin
    • 1 1/2 teaspoons balsamic vinegar

PREPARATION

    1. Mix mint, paprika, salt and 1/2 tablespoons oil in medium bowl; mix in lamb. For more tender burgers manipulate the lamb as little as possible to get the spices mixed in.
    2. Shape into four 3/4-inch-thick patties. Make a dent in the middle so it cooks evenly.
    3. Grill, pull them off the heat at 145 degrees. do not overcook them lamb dries up quickly.
    4. Toss spinach, feta, cilantro, onion, vinegar, and 1 and 1/2 tablespoons oil in bowl.
    5. Assemble and Smash together. Seriously. smash it, or your feta is going everywhere.
    6. Enjoy!
