Turkey Meatballs

Are you looking for a yummy and healthy snack to take with you over the holidays. Here is an awesome recipe for the crockpot!

Ingredients:

  • 1½ lbs. ground meat (I would recommend 1/2 lb of Ground Turkey and a 1 lb of Extra Lean Ground Turkey (99% fat Free)).
  • 1 egg
  • ½ medium yellow or red onion (finely chopped)
  • 2 cloves garlic (crushed)
  • ¼ cup Parmesan cheese
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ¾ tsp red pepper flakes
  • ½ cup fresh parsley (finely chopped)
  • 3 TBSP olive oil or cocnut oil (for cooking onions & meatballs)

Directions:

  1. In med skillet over med heat, add 1 TBSP olive oil. Add chopped onions and cook until just tender. Add in garlic. Remove from heat.
  2. Place ground meat in large mixing bowl. Add egg, Parmesan cheese, salt, pepper, red pepper flakes, & parsley. With spoon or using clean hands, gently mix together.
  3. Add onion & garlic to meat mixture and mix to combine.
  4. Using your hands, shape into small balls (approx 1½” in size).
  5. In a large skillet over med/high heat, add 2 TBSP olive oil. Cook meatballs in batches until browned on all sides, remove from pan and place on paper towel to drain off excess fat.
  6. Once all meatballs have been browned, place onto baking sheet and place in preheated 350* oven for about 5-8 minutes to finish cooking.

Options to spice it up!

  1. In a slow cooker – add 1 cup of Franks Red Hot for a yummy Buffalo Meatball, serve with Greek Yogurt Blue Cheese Dressing
  2. In a slow cooker – add a jar of your favorite low sodium Pasta sauce, serve alone or with Spaghetti Squash
  3. Add into a yummy vegetable soup for extra protein!
