When Becky brought these into the studio, I’ll admit -I was leery of this little green muffin she was pushing on me like a drug-dealer. But, I’m not one to shy away from a baked good (ever)… So, of course, I gave it a try. They’re delicious! Just give it a try, you’ll love it, you know you wanna…

Makes 24 Mini Muffins

1-2 Large Handfuls of fresh Spinach
3/4 cup Organic Steel Cut Oats
1 Very Ripe Banana or 1 small Apple
3 Pitted Dates or 3 tbsp-1/4 cup Raw Organic Honey
2 Eggs
1 tbsp Peanut/almond/cashew butter
2 tsp Pure Vanilla Extract
1/2 tsp Baking Soda

1. Preheat oven to 350.
2. Put all of the ingredients in a high powered blender
3. Blend until completely combined.
4. Grease a mini muffin pan, or use paper liners, and fill cups with batter.
5. Bake for 12 mins and let cool completely before serving.
