Everyone is on a rampage for Avocado toast, am I right? So when I found a Smashed Avocado Bene at Snooze I knew I had to try and recreate! Now I don’t go the effort of adding the hollandaise which is why is added quotes to the Benedict. But for a quick 10 minute meal – it is nutritious, delicious, easy and not to mention Gluten free and Dairy Free!
2 slices of favorite Gluten Free Bread
1-2 TBSP of Olive Oil
Garlic Powder to taste
2 large Eggs
1 TBSP of Vinegar
1 Ripe Avocado
2 tsp of Everything but the Bagel Spice (Trader Joe’s)
2-3 cups of water
In a deep skillet, bring water to a boil. Add 1 tsp of olive oil and the vinegar. Crack each egg in the water, turn off the heat, and cover for 3-4 minutes until desired yolk is ready. Rub olive oil on one side of the bread slices, I like to add a little garlic powder (but that is optional) and toast under the broiler for 2-3 minutes. You can also use a toaster if you need a quicker option. While the eggs and toast are working their magic, I mash my avocado and add a little garlic powder and salt to taste, or you can add some extra everything spice. When the toast is nice and golden brown, layer the avocado on top, then drain and add the poached egg. Finally I finish with the Everything but the Bagel Spice from Trader Joe’s and enjoy! The only thing missing is the hollandaise sauce, but with enough motivation – you could add that as well! 😉 Here is an easy recipe for the sauce made in a blender!
