Lemon Chia Seed Energy Bites

Ingredients

1/2 cups Coconut Flakes (unsweetened)
1/2 teaspoons Salt, Kosher
1 tablespoons Lemon Zest (1 Lemon)
2 tablespoons Organic Chia Seeds
1/3 cups Fresh Lemon Juice
2 cups Medjool Pitted Dates
2 1/2 cups Cashew Nut, Dry Roasted

Instructions

1. Line an 8X8″ pan with 2 crisscrossed pieces of parchment paper, leaving an overhang on all sides.
2. Place the cashews in the bowl of a food processor and pulse until finely chopped.
3. Zest the lemons, then juice them. Add the dates, lemon juice, chia seeds, lemon zest and salt. Pulse until well combined and
the mixture begins to form a ball, about 1 min.
4. Press the mixture into the prepared pan and top with the coconut. Refrigerate until firm about 30 min, then cut into 16
bars. OR alternatively, form the mixture into balls, then roll in shredded coconut. Place on parchment and refrigerate until firm.
