Hosting Healthy: Part 2 Arugula Citrus Salad

So the Salad course is generally pretty easy and with the stores making pre-washed lettuce to accessible. You can literally put this together in minutes.

  • Cuties or mandarin oranges
  • Sliced Almonds

Dressing:

  • Champagne Vinegar
  • Dijon Mustard
  • Extra Virgin Olive Oil

Lightly toast the almonds in a 350 degree oven, stirring occasional for about 3-5 minutes. Peel the mandarins and slice in the middle of each segment. This will make the wedges bright and fresh looking.

Then mix up the extra virgin olive oil, champagne vinegar, Dijon mustard, salt, and pepper to taste. You could also add a little fresh garlic if you would like. Shake in a mason jar until all infused together. Drizzle about 1-2 table spoons on each salad right before serving, sprinkle with a few pine nuts and mandarin slices, and you are good to go!
