Are you looking for a yummy and healthy snack to take with you over the holidays. Here is an awesome recipe for the crockpot!
Ingredients:
- 1½ lbs. ground meat (I would recommend 1/2 lb of Ground Turkey and a 1 lb of Extra Lean Ground Turkey (99% fat Free)).
- 1 egg
- ½ medium yellow or red onion (finely chopped)
- 2 cloves garlic (crushed)
- ¼ cup Parmesan cheese
- ½ tsp sea salt
- ½ tsp black pepper
- ¾ tsp red pepper flakes
- ½ cup fresh parsley (finely chopped)
- 3 TBSP olive oil or cocnut oil (for cooking onions & meatballs)
Directions:
- In med skillet over med heat, add 1 TBSP olive oil. Add chopped onions and cook until just tender. Add in garlic. Remove from heat.
- Place ground meat in large mixing bowl. Add egg, Parmesan cheese, salt, pepper, red pepper flakes, & parsley. With spoon or using clean hands, gently mix together.
- Add onion & garlic to meat mixture and mix to combine.
- Using your hands, shape into small balls (approx 1½” in size).
- In a large skillet over med/high heat, add 2 TBSP olive oil. Cook meatballs in batches until browned on all sides, remove from pan and place on paper towel to drain off excess fat.
- Once all meatballs have been browned, place onto baking sheet and place in preheated 350* oven for about 5-8 minutes to finish cooking.
Options to spice it up!
- In a slow cooker – add 1 cup of Franks Red Hot for a yummy Buffalo Meatball, serve with Greek Yogurt Blue Cheese Dressing
- In a slow cooker – add a jar of your favorite low sodium Pasta sauce, serve alone or with Spaghetti Squash
- Add into a yummy vegetable soup for extra protein!
